Wash and soak rice and lentils for 15 minutes
heat 2 tbsp oil and saute the chopped onion ,garlic ,ginger and green chillies together
Add the mixed veggies . saute for a minute
Add the chopped tomatoes and seasonings. cover and cook for 5 minutes. drizzle some chilli flakes .
Now add the soaked rice and lentils. add turmeric
Add the water. Let it come to a rolling boil. Now cover and cook for 15 to 20 minutes or pressure cook for 3 whistles.
Open and let it cool to room temperature
Mash the boiled potatoes with fork
Now add it to the lentil khichdi. add all the seasonings.
Give shape of nuggets
Preheat oven to 230 ℃
Make the cornflour slurry by mixing the cornflour wuth water. Add the seasonings .
Spread bread crumbs on a plate
Grease the baking tray well with oil
Dip each nugget in the slurry
Then roll in the bread crumbs
Place on the baking tray
Repeat for all
Now bake at 180℃ fir 20 to 25 minutes. Drizzle with oil and turn half way through.
Tasty delicious oven baked healthy lentil rice nuggets ready to devour.
Accompany with your favourite sauce and some onion rings
