Ingredients

Serves : 12
  • 1 cup Rice


  • 2 tbsp chana dal


  • 2 tbsp moong dal


  • 1 cup mixed veggies


  • 1 large onion


  • 3 green chillies


  • 4 garlic cloves 1/4 inch piece of ginger


  • 1 large tomatoe 1 /2 tsp red chilli powder


  • 1/2 tsp turmeric


  • 4 cups water


  • 1 tsp salt


  • 4 boiled potaoes


  • 1 tsp garlic seasoning


  • 1/ 2 tsp red chilli flakes


  • 1/2 tsp oregano


  • For the cornflour slurry : 2 tbsp cornflour


  • 1/2 to 3/4 cup water


  • 1/ 4 tsp garlic seasoning


  • 1 pinch of salt


  • 1/2 cup bread crumbs


  • 1/4 cup oil


  • 2 tbsp chopped coriander


  • 1 onion sliced

Directions

  • Wash and soak rice and lentils for 15 minutes
  • heat 2 tbsp oil and saute the chopped onion ,garlic ,ginger and green chillies together
  • Add the mixed veggies . saute for a minute
  • Add the chopped tomatoes and seasonings. cover and cook for 5 minutes. drizzle some chilli flakes .
  • Now add the soaked rice and lentils. add turmeric
  • Add the water. Let it come to a rolling boil. Now cover and cook for 15 to 20 minutes or pressure cook for 3 whistles.
  • Open and let it cool to room temperature
  • Mash the boiled potatoes with fork
  • Now add it to the lentil khichdi. add all the seasonings.
  • Give shape of nuggets
  • Preheat oven to 230 ℃
  • Make the cornflour slurry by mixing the cornflour wuth water. Add the seasonings .
  • Spread bread crumbs on a plate
  • Grease the baking tray well with oil
  • Dip each nugget in the slurry
  • Then roll in the bread crumbs
  • Place on the baking tray
  • Repeat for all
  • Now bake at 180℃ fir 20 to 25 minutes. Drizzle with oil and turn half way through.
  • Tasty delicious oven baked healthy lentil rice nuggets ready to devour.
  • Accompany with your favourite sauce and some onion rings
  • What could be more tasty for kids or elders to dig into
